I run the premier American Bison hunting business in America. Bison wear out knives!!! I've skinned, quartered and caped hundreds.
Granted, I used to insist on hand honing all of my skinning and gutting knives. However, my pro butcher told me "Get a good electric sharpener and put a perfect edge on in seconds instead of minutes."
I got exactly what I was looking for with the WorkSharp MK.2 knife and tool sharpener. It quickly puts a brilliant edge on all of my boning and skinning knives. The time it saves me is fantastic. Time is money.
The bonuses are the 20 and 25 degree sharpener angle options for knives and the scissor sharpening option. I didn't realize how dull my sheers had gotten until I ran them over the MK.2 a couple times.
The MK.2 is a great value and easy to use. Don't overthink it. Any novice can quickly put a razor edge on any knife and be back to cutting and gutting lickety split. You'll be glad you added it to your skinning and butchering shed.
Whether it's on the tundra in Alaska to guide for big brown bears and monster moose, or when I lead my hunters into the kill-zone on bison, mule deer and whitetails in South Dakota...I go well healed with sharp knives for the skinning chores.

Skinning an animal this size requires sharp knives.
A Super Trophy class buffalo is a big butchering project...the sharper the knife the better. It's good to have some help too.
This shows the size of the bison project from the INSIDE.
