Summer Cookout: Venison Fajitas

This Venison Fajita Recipe Makes an Ideal Summer Dish

It's summertime and what better way to celebrate with your friends than sharing an excellent venison recipe? We love this venison fajita recipe from the wild game cooking experts at Weston Products. The marinade is the perfect compliment for your deer, elk, moose or other wild red meat. Get some friends together, crack a cold one and enjoy a few tacos. Ingredients

  • 2 lbs. venison
  • One red pepper
  • One orange pepper
  • One yellow pepper
  • One green pepper
  • One red onion
  • 1/4 cup avocado oil (or vegetable oil)
  • Marinade
  • 1/4 cup tequila
  • 1/4 cup triple sec
  • Juice from two limes
  • 3 garlic cloves, smashed
  • Small handful fresh cilantro leaves
  • 1/2 teaspoon fresh mint leaves
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper
  • 1/4 teaspoon smoked paprika
  • To Serve
  • Corn tortillas
  • 8 oz. crumbled goat cheese
  • 2 avocados
  • 1 cup salsa
  • 2 limes

Directions:

Slice your venison into steaks and then into fajita strips.

Chop the cilantro, mint and garlic. Mix together the marinade ingredients in a large bowl. Mix the venison strips into the marinade and place it all into a vacuum sealer bag and seal. Place the bag into the refrigerator overnight.

Using a mandoline, slice the onion and peppers.

Heat a skillet over high heat with two tablespoons of avocado oil (vegetable oil may be substituted). Once hot, place onions and peppers into the skillet and roast until soft and blackened. Remove the peppers and onions from the skillet and cover to keep warm.

Add two more tablespoons of avocado oil to the skillet. Place the venison into the skillet, turning the pieces almost immediately. The venison should be tender and pink in the middle, but charred on the outside. Move the venison strips from the skillet into a serving dish.

To serve, wrap the venison, onions, and peppers into corn tortillas, and top with avocados, goat cheese, and your favorite salsa. Squeeze a lime over the top of the fajita.
